As of late, I’ve been fully utilising the kitchen (especially the weekends) and I have been trying out all sorts of recipe with a challenge. I usually dig up a recipe when I wake up and using whatever ingredients I have. Hence, the challenge with limited “resources”.
This is one quick and easy to make pancake recipe which does not require a lot of ingredients and effort. Perfect for a lazy weekend at home.
Eggless & Flourless Blueberry Oatmeal Pancakes

Ingredients
- 1 cup oatmeal
- 1/2 cup yogurt
- 1/2 cup milk
- 1 handful blueberries
- 1 tablespoon olive oil (additional 1 tablespoon for cooking)
- 1 tablespoon sugar
- 1/2 teaspoon salt
Instructions
- Add all the ingredients into a blender or food processor and blend until the mixture is well combined. Heat non-stick pan with the additional olive oil over medium-high heat. Scoop a drop batter by large spoonfuls onto the pan and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
- Serve pancakes with butter, jam or just nutella!
