Day 9 Eat Clean Challenge: Overnight Oats with Raisins & Strawberries, Micro-Veggies & Egg and Micro-Chicken with Stir-Fried Kailan

19.05.2014 – It’s Monday again. Was feeling very blue as I had to rush to work and didn’t get to prep my lunch the night before. Nonetheless, Day 9 was a successful eat clean day ūüėÄ

#Day 9 Eat Clean Breakfast: Overnight Oats with Raisins & Strawberries

Since the start of this eat clean challenge, I picked up liking overnight oats with fruits for breakfast. It’s easy to prep and delicious.


¬Ĺ handful of raisins
5 strawberries
1 cup rolled oats (I’m using quick cook oats)
1 cup low fat milk

Combine everything in a bowl. Mix well and transfer into an airtight container. Keep in refrigerator for at least 6 hours to 24 hours.

#Day 9 Eat Clean Lunch: Micro-Veggies & Egg

I fell asleep and totally forgotten about packing lunch for Day 9. Woke up slightly later than usual and rushed to get ready to work. Well, I managed to grab the leftover veggies (cauliflower and french beans) from Week 1, tomatoes and an egg.

During lunch time, I combine all the veggies into the glass container and heat them up in the microwave and top with soft-boiled egg and fresh tomatoes. Quick, simple and delicious. Teehee..

#Day 9 Eat Clean Dinner: Micro-Chicken with Stir-Fried Kailan

For dinner, I wanted to try the Buzzfeed chickpeas salad but I end up cooking this Kailan because it was turning yellow already. Had to throw half away coz they wilted! OMG so fast even tho kept in fridge. *sigh* Also, I made a batch of lemon marinated Micro-chicken (recipe here) for the week.

1 bunch of Kailan
¬Ĺ micro-chicken breast (recipe¬†here)
¬Ĺ¬†medium carrot, sliced
1 garlic clove, sliced
1 tablespoon olive oil
a pinch of salt
freshly ground pepper
chili powder **optional**


  1. Heat olive oil in a pan¬†over medium heat. Add garlic and cook until slightly brown. Add carrots and cook for almost a minute, until softened. Add in Kailan, this shouldn’t cook more than a minute.
  2. To serve, cut chicken and place on top of the veggies and served with a dash of chili powder.
