Counting down to 4 more days to go till the end of this 2 weeks eat clean challenge and I have already abandoned the original menus and head on with the recipes I like from BuzzFeed. Truth to be told, I felt chubbier than before but when I stepped on the scale, I actually lost some weight already. Nonetheless, just few more days to go!
#Day 10 Eat Clean Breakfast: Mango Berries Smoothie
Smoothie for breakfast is not only delicious and packed with vitamins but also easy to prep and convenient for on the go.
MANGO BERRIES SMOOTHIE
1/2 cup cubed mangoes, frozen
2 strawberries, frozen
1/2 handful of blueberries, frozen
1/2 cup greek yogurt (or natural yogurt)
1/2 – 3/4 cup low fat milk
Method: Combine everything into a high speed blender and puree until smooth (about 1 minute).
#Day 10 Eat Clean Lunch: Micro-Chicken Salad
If you have been following my eat clean journey, you would notice how much I love making this micr0-chicken salad. Not because it is delicious but also because it is so so so easy to prepare!
Micro-chicken Salad with dijon lemon vinaigrette. This round of salad has more than a handful types of veggies: lettuce, carrot, cucumber, radish, capsicum of 3 colours (orange, red, yellow)
#Day 10 Eat Clean Dinner: Prawn Glass Noodle Soup
After a whole day at work, striving the hellic jam, the last thing I would want to do is having a pile of dishes to clean! So, I just made a simple bowl of glass noodle soup with lots of prawns and veggies.
PRAWN GLASS NOODLE SOUP
Tomato, cubed or roughly cut
Glass Noodle, soaked and drained
- Boil a bowl of water in a pot. Add in carrot and tomato once the water starts to boil and let it cook until carrots are soften.
- Add in the glass noodle and bok choy.
- Season the soup with salt and pepper.
